There’s nothing like eating a bowl of good fried rice. Fried rice is a staple here in this house. My kids LOVE it. I usually make fried rice when there’s left over rice and when I steam Chinese broccoli. I save the stems for the fried rice.
It’s best cooked with left over rice because it’s usually harder. You can also achieve this texture by cooking it 1-2 minutes less. If you have a rice cooker with several options, use the Harder option to make the same texture if you don’t have old rice. This is the one I have:
What makes Japanese fried rice taste so good and different is the Japanese mayo called Kewpie Mayo usually found in Asian supermarket. There is also a secret ingredient which Asian cuisine don‘t normally use; it’s butter. Anything with butter tastes much better right?
The authentic fried rice usually doesn’t have Chinese sausages but my kids love it with their fried rice. So I added those in it.
Here’s the recipe to this simple and easy fried rice:
Ingredients
1 garlic bulb chopped
Diced chinese broccoli stems and carrots or defrosted mixed vegetables
3-4 cups of old rice
4 Chinese sausages sliced
5 eggs
2 tbsp soy sauce
1 tsp salt, pinch of salt for eggs
2 tbsp Kewpie Mayonnaise
2-3 tbsp butter
2 shallots or 1 small onion diced
Instructions
Chop all garlic. Put oil in wok and sautéed he garlic until slightly crispy brown. Remove and set aside 3/4 of the garlic for garnish at the end.
Throw in vegetables and cook through.
Beat the eggs and add mix in 1/4 tsp salt. Cook eggs in wok.
Throw in Chinese sausages and cook for 1 minute.
Put rice in the wok and stir fry until broken apart.
Add soy sauce, salt, mayo and butter. Mix thoroughly. Adjust to your liking.
In another frying pan, add oil and fry shallots or onion until crispy.
Garnish with the set aside fried garlic and shallots.
Place rice in serving dish.
Tip: You can buy fried garlic and shallots in the Asian supermarkets to save this step. It usually comes in a plastic container. If you’re replacing the fresh garlic, only use 3-4 cloves of garlic for the fried rice.
